NOTES FROM THE TEST KITCHEN - JUNE EDITION

We have been lucky to have such a wonderful spring and with June comes the official start of, hopefully, a long, hot summer. Not only that, but June also represents the end of the school year and Father's Day...it's a busy month! Here at the test kitchen, we have come up with a bit of a nostalgic flavour that would be a sweet treat for both dads and kids.
Our Cherry - Vanilla Gelato provides the bright, luscious flavour of the year's first cherries and the smooth, mellow taste of vanilla, reminiscent of a Cherry - Vanilla cola. This gelato would also be a delicious addition to a cola float; just fill a tall, soda glass with your favourite brand of cola and top with a scoop of our Cherry - Vanilla Gelato. Add a fresh Bing or red cherry to garnish, and serve with a long spoon and straw.

Cherry - Vanilla Gelato (Hot Process):
2700g whole milk
300g heavy cream
150g PreGel Diamant 50
175g skim milk powder
525g sugar
250g PreGel Cherry ForteFrutto®
90g PreGel Vanilla Velvet Traditional Paste
- Weigh the PreGel Diamant 50, skim milk powder and sugar.
- Weigh and add the whole milk, heavy cream, PreGel Cherry ForteFrutto®, and PreGel Vanilla Velvet Traditional Paste and blend using an immersion blender.
- Pasteurize to 85°C / 185° F.
- Pour into a batch freezer and freeze.
Cherry - Vanilla Gelato (Cold Process):
2700g whole milk
300g heavy cream
300g PreGel Totalbase®
175g skim milk powder
475g sugar
250g PreGel Cherry ForteFrutto®
90g PreGel Vanilla Velvet Traditional Paste
- Weigh the PreGel Totalbase®, skim milk powder and sugar.
- Weigh and add the whole milk, heavy cream, PreGel Cherry ForteFrutto®, and PreGel Vanilla Velvet Traditional Paste, and blend using an immersion blender.
- Pour into a batch freezer and freeze.
